<p>Are we limited to just one instance? Or can we talk about several? I've done research and I've taken classes over the summer, so I'm not sure if I should just mention the research or to include both.</p>

<p>^^^I included two, but not actual research.
I self-studied an AP exam and wrote about that, and I did non-scientific research while abroad and wrote about that.
They turned out rather nicely though. :)</p>
