One isn’t necessarily better than the other, when it comes to pre-med.
Nova is a small (undergraduates) private, while the other two are large public universities. Very different feel. You’ll get more “attention” and support at the private, but it’s likely also going to cost more and you’ll need to plan on paying for med school, so saving some money earning your BS would be wise.
UCF and USF have associated medical schools/hospitals, so it’s fairly easy to find medical related ECs (something you’ll need if you want to apply to med school). NSU also has a school related med school (Nova Southeastern University College of Osteopathic Medicine). UCF and USF do generate large number of applicants to med schools (a couple of hundred, each year).

In 2015-16, UCF supplied 324, while USF supplied 366. Compare that to 341 at FSU or 373 at the University of Miami. (NSU having a much smaller undergraduate class, sends far fewer).
