So next year for my junior year due to scheduling constraints I most likely will not be able to take French in school. However, I really do want to take at least 3 years of French so I was looking at online courses and I also checked my district’s policy for online classes. It says-
“If the learning experience is for original credit and/or to meet a prerequisite requirement, the grade will not be posted to the student’s transcript.”
Does this mean that colleges won’t see the online class I took and thus, won’t think I learnt the equivalent of 3 years/courses of french?

Whether your high school puts the course on its transcript is immaterial. You will need to have the transcript for that course sent separately from the online college or high school where you have taken it.
You should also verify with the GC that you are interpreting the district policy correctly (and that it’s still current).
