I am an incoming freshman who will most likely receive a 5 on the AP Chemistry Exam. Would I be ready to take organic chem my freshman year, or would I be wise to hold off until sophomore year? I know it is a killer course, and my other courses will probably be Cal 3, Engineering Science, some Engineering Seminar, and another Elective Course (undecided as of now). Any insight into this dilemma or about the organic chem course in general would be appreciated.

They have a special organic chem class for freshmen with a strong background in chem (5 on ap). I think its chem 218, the rest of us take chem 220 and then both lectures take the same lab, chem 219.

If you get a 5 on ap, then you pretty much know your chem, if your class made it through electrochemistry then you're probably good. The only reason to retake is if you didn't grasp it well the first time. You can always review it later before the mcat. It's totally 8 extra credits if you decide to retake. If you're not going to retake which it seems like it if you're just wondering whether to take as a freshmen or soph, then it makes sense to take it right after you took ap chem since its still fresh in your brain.
