Have you taken and done well on AP exams? If yes, that would demonstrate the rigor of your high school curriculum.

Oxford College likes students who are engaged in their school community. Founding clubs and heading them will be looked on favorably because Oxford likes/needs students who take charge and are willing to contribute to a robust campus life. This is a big plus for you.
Oxford College’s most recent admitted class had the highest academic statistics of any entering class - particularly ACT/SAT scores. If your SAT score is on the lower end of the 1300-1400 range, that will hurt you. Do you have other standardized test scores to show your abilities such as SAT II or AP exam scores?
Oxford does have strong introductory STEM courses so it’s a good fit for your academic interests.
Your chances are much better in ED1.
