Passed / Not Passed grading system

At Berkeley, can you take any class using the P/NP grading system? Could I take all of my UC requirements and L&S requirements as P/NP so that they do not affect my GPA?

Also, can you change between P/NP and letter grade during the semester? For example, if I am doing a class in P/NP grading and I think that it is going well enough to positively impact my GPA, could I change to letter grading so that I take an exam in the class and that I have the opportunity to get a good grade on my transcript?

Many UC GE requirements and major requirements cannot be taken for P/NP option.

Definitely go the link provided by @Gumbymom . There are deadlines, so if you are thinking of changing a class from one type of grading to the other, keep those deadlines in your calendar. Problem is, you may or may not have enough data (i.e. graded tests, papers or projects) back to make that determination by the deadline.
