You have competitive test scores, but your GPA will impact your chances even in attending a competitive HS.

As you can see, that UCD is still a High Match 50/50. UCSB has no Business major so I assume are you planning to apply to Econ which is highly competitive since you are admitted as a Pre-Major and must pass 3 Econ classes with an acceptable GPA before declaring.
UCI for Business Admin is highly competitive so it will be a Reach with your GPA. Average UC GPA of 4.15 and a 18% acceptance rate.
Are you more interested in attending UCD regardless of major?
This is how UCD admits:
-College of Agricultural and Environmental Sciences admits by college
-College of Letters and Science admits by division within the college
(Humanities, Arts and Cultural Studies; Mathematics and Physical Sciences; Social Sciences)
For UCD, it will make no difference if you apply for either college, so pick a major you want to pursue for the next 4 years. Also UCD does not have a Business major so are you looking at Managerial Econ?
For Cal Poly SLO, they admit by major and trying to switch majors can be difficult since they will review your original application to see if you would have qualified for your new major as an in-coming Freshman. If you plan to apply, make sure you can live with your major for the next 4 years. Also remember it is easier to switch down then up.
Business at SLO will be a slight Reach since their average CP GPA is 4.01 for the Business school although you are above the ACT average of 30.
SJSU looks like a solid Safety.
UCR has a very good business school and again you will be admitted as a Pre-major and must complete specific courses and GPA to declare the major. UCR is a Match.
UCSC does not have a Business school or major so again are you interested in Business Management Econ as your major? UCSC is a Match school.
You might want to also consider San Diego State for Business (highly regarded and ranked).
