If you're not planning on going to law school or planning on doing law, what can you do with a political science degree after your undergrad?

There’s a lot of entry level jobs that don’t require skills gained specifically from a political science degree. If you look around craigslist or monster, you’ll see that a lot of jobs merely require a bachelor’s degree. You start at an entry level position in a field that you’re interested in, and you move up.

If you’re interested in using your degree to its full extent, there are few options at the bachelor’s level. Working for an organization like ACLU or Greenpeace as a canvasser or some sort of coordinator. Working on a political campaign as a coordinator or organizer. The state, local, or federal government. Working as an analyst.

Almost nothing. Your options are very, very limited.

Actually there are going to be virtually no entry level jobs that “just require a degree.” I have no idea where people get this.

I’d recommend coupling statistics and more quantitative research methods with your political science degree, if you can stomach it. That will broaden your horizons for job opportunities.
