Here is a question for you: how difficult is the ACTUAL SAT compared to various practice tests?
I have done the official practice tests from the college board and I also have the Princeton Review 11 Practice Tests. The ones from the collegeboard seem to be a lot easier then the ones from the Princeton textbook.

What level of difficulty can I expect on the real exam?

Sometimes, test anxiety may work in the favor of the test taker, not in my case though. We may be more attentive and cautious (which is good to a certain degree) on the real test. I took CB online tests and released tests of CB and have given SAT twice.

I would say that they are the best cum best test available for practice.
