I have heard that many med schools weight Hopkins and Harvard as the same tier (in terms of GPAs) and other top schools (i.e. Stanford, Yale, Princeton, MIT) on a slightly lower tier.

Is this true?

I doubt that. Getting a good GPA in Princeton is hard and sometimes harder than JHU and Harvard because they have a strict curve. Princeton has a strict grade deflation policy.
Stanford, Yale and MIT aren’t any easier than Harvard and JHU, IMO. Also depends on what school you go to (like which schools in the university). Duke Engineering is harder to get a high GPA than Duke Arts and Science. UPenn Wharton (yes there are kids who do premed and BBA, some as a double major with Biology, some as a joint Dual Degree program) is difficult to get a good grade in.
