A mechanical degree from which of these 2 will be better for future job and grad school prospects?
At Princeton, MechE and AeroE are tied into one concentration. I’d say if you’re interested in both go with Princeton. Both have very good job prospects and good graduate school placement.
I should note, however, that I think if you intend to get your MSE at Princeton as well as your BSE, you can count about 6 credits from your undergraduate work towards your Masters. I’m not sure if this goes for just EE and CS or the whole engineering department.
