I've asked this question before, but i received no straight answers... Hopefully an answer this time:)

SO when we apply for colleges, do we need to give certificates and documentation supporting ECs, or do admissions officers usually accept your claims as honest?

As far as I know most admissions officers are more annoyed with additional documentation. You don't need to submit any proof about your ECs along with your application, however in some cases the school might contact you/your school etc. about any proof. As far as I can tell they only do so if they suspect you to have lied about your ECs.
I didn't submit any proof about my ECs, because none of the universities I applied to wanted any proof.

They will usually accept your claims as honest.

Being the captain of the soccer team won't get you into college, and the sort of accomplishments that would get an international applicant noticed (e.g. national awards) are easy enough to verify.

also, you usually have to check a box or something saying that you agree that all the info you have given is correct and true, so :)

i gotta say though, i was unsure about this for a while.. like back home ive been doing some community service, like tutoring and coaching soccer to kids in underprivileged neighborhoods... and also ive started 2 fundraisers collecting like several hundred pieces of clothing as well as over $10000 that i then donated to poor families in india... and i have no proof though... which sucks in case they wonder..
