Pros and Cons of Opting out of Summer

The same goes for not opting out of summer. :P

So I had no idea that it was possible to switch starting terms, in fact I was quite surprised. I currently will be starting in Summer B, but if I were to switch, what would I gain or lose?

Other than the obvious reasons? UF does require that you complete 9 credits over a summer term, before graduating, so going to the summer would help get a jump start on it.

Going in the summer can also ease the transition to college, and allows you to take advantage of some summer bridge programs (like SETUP).

Going in the fall would allow you to pass on the expense of summer, including paying for that dorm (a bit pricey). Later when you live off campus (as most junior/seniors do), you can take the full summer (summer C or A+B) and all 9 credits (or choose a study-abroad program), and have lower expense (apartment vs. dorms).
