Purposely leaving out some EC's on applications

I have various extracurriculars including many clubs to which I play a minor leadership role. These EC's, however, are scattered across various categories.

Would it be beneficial to leave out some of the clubs (even ones for which I organized fundraisers/events) in the interest of creating more "focus" to my overall application?

In a similar vein, I'm considering leaving out "piano" on my application because:
1. I'm Asian (and piano is overdone for the Asian demographic)
2. I'm not extraordinary...no conservatory study or Carnegie Hall debuts
3. I quit after sophomore year

However, for piano, I did win some regional awards + state recognition.

Would you recommend leaving out "piano" on the application as well?

Thank you for your thoughts.

If you won regional or state awards, don’t leave it out. If you were just a member/participant in an activity and didn’t achieve anything notable, leave it out.
