Questino about Undergrad --> Grad Engineering

A lot of people suggest going EE or ME for undergrad, then BME grad if you want to eventually do biomedical engineering. My question is, won't they be teaching grad-level biology in graduate school, which you will be unprepared for if you haven't taken it in undergrad, or does grad school curriculum assume no prior experience?

No, they teach grad-level BME in grad school, not biology. You should take a few BME-related electives along with EE or ME so you have some background, but it's not absolutely necessary.

I say just do what you want. If you really like the prospect of BME, then by all means, stick with it in undergrad. As long as you keep your gpa up, you shouldn't have a problem going into grad school.

And still, engineering is engineering, you'll at least get a job somewhere.

For many of the schools I am looking at they do indeed do grad level bio courses.
And in actuality, many people do BME undergrad and then ME/ECE/ChE for grad for a broader field.
