If my grandfather (deceased) was an adjunct professor at UNC prior to retirement, would this help my application? Is there any way I can indicate this when applying?

Thanks.

I really don’t think this will help your application, this is not legacy ( at least going from the information you have provided).

Legacy status, defined as family members having graduated from UNC, is a little bit helpful, as I understand, but not even that helpful.

If you really want to communicate this Grandfather position at UNC, I guess you could work this into an essay on the supplemental application to UNC from the Common App., but it’s probably not a good idea to focus to much on him, when the focus should be on you. Best of luck.
