Question about Intel mentoring

<p>pardon me if these are really incompetent questions
but i'm a rising junior interested in getting a science fair mentor.
and so i was wondering how you do it. you email a professor and say you want to work with them on their project and then you use their data? if you have worked with a mentor and entered that research into SF please tell me in detail how this works.
also, when do you go? i plan on going a little in the summer and during the school year but my mom works so i'd only be free on weekends. do professors ever work on the weekends?
i'm very very confused.
