If I take pre-med courses during my undergrad but don't finish all of them, can I enroll in a post-bac program and take the remaining courses? Or am I forced to enroll in a 2 year post-bac program?

depends on the “program”. A few of the tippy-top post-bac programs prefer that you have essentially zero premed science courses taken. Others are a lot more flexible, and allow you to take what you need. But if you are only missing a few courses, physics, for example, you could register for your local college Extension service, or night program, or whatever they call it in your area.

You don’t necessarily need a full “program”.
