Question about SAT IIs?

<p>So here's the story:
I am a senior who took SAT II's in US History and Math 2. I didn't do as well as I could've.
I plan on retaking Math 2, because I was pretty close to my ideal score and I feel like I will get a higher score this time. I don't want to take US History again solely because I haven't opened an US History book since June.
I want to take another SAT II as well, to compensate for my US History test.
Should I take literature or Chinese with listening?
Literature is a lot harder for me; Chinese is relatively easy because I speak Chinese and have taken classes in school.
I know I will get a higher score in Chinese, but will it be frowned upon because I'm Chinese? Will it be 'less important'?
Or would you guys recommend I take BOTH Chinese and Literature?
Also, please confirm: I can send in my highest SAT II scores out of ALL the SAT IIs I take, right?
