I'm a sophomore in high school and only recently looked into SAT subject tests. I see that some top universities require you to take two (and sometimes three) of them. Other than as a requirement, is it still a good idea to take at least one? In other words, does it improve your credibility when applying to a college? Are there any other benefits?

When does one typically take the subject tests? Or is there really no specific time-frame?

The tests definitely do help you in terms of applying to colleges. Also if you are taking any AP classes, taking the SAT subject test in May before the actual AP test serves as good prep (same subjects =)).

The subject tests are offered on all SAT test dates. You can take up to 3 different subject tests in one testing session/day. The only ones to watch out for are the languages with listening which (if I remember correctly) are offered only on the November test date.
