Questions: APs and Self-Study

Before I begin, here is some pertinent information:

Sophomore attending a Texas HS

Low GPA (93.7W), understand that this is rapidly increasing

196 PSAT (as a 10th grader, of course), went in totally dry, shooting for 220+ next year

Sophomore schedule:
- Pre-AP Algebra 2
- AP World History
- Pre-AP Chemistry
- Pre-AP Spanish 3
- Pre-AP English 2
- Debate (tournaments are fun, but taking it as a class is a waste)
- Health Science (medical field instruction, basically wasted period, also)

Junior schedule (preregistration, assuming no conflicts):
- Pre-AP Pre-Calculus
- AP Statistics
- AP Biology
- AP Physics B
- AP US History
- AP English 3
- AP Spanish 4

My schedule senior year brings me to the first question. I currently have decided on:
- AP Calculus BC
- AP Physics C
- AP Chemistry
- AP Government/Economics
- AP English 4
- AP Spanish 5

This leaves me with 13 APs and an open slot senior year, and so I am faced with a quad-llema. My choices are:
Get a 14th AP course with
- AP Environmental Science
- AP Human Geography
- AP European History
Or use this last slot for another course, suggestions welcomed.

I find the AP Human Geo teacher detestable, so there would have to be a pretty large incentive to take the course, hopefully I can get some input from students who have taken it.

Your thoughts? Is it counterproductive, in terms of college applications, to have a schedule so bereft of non-academic pursuits?

In addition to school, I'm also co-writing a work of fiction with one of my classmates (we have just completed the planning stages, and have only just begun chapter 1, but it's coming along very well). The story is very original, I've never heard of something quite like it, and perhaps it's just our pride, but we think it has true potential to be published. I'm going to continue to debate next year, but only participate in tournaments, not the class, which at my school, would be a total waste of valuable time.

I also plan on doing intensive volunteer work, and would certainly consider any suggestions for this as well.

Lastly, what courses are worth taking the AP exam for, and what should I self-study for so that I can take it next year and it can go on my applications? I was thinking Chemistry, but I don't know what else to self-study beside that.

Thanks for any and all input, much appreciated.

tl;dr:
-What should my last available slot be? APES, AP Euro, AP Human Geo or other?
-What other ECs should I consider to strengthen my application, besides writing a book and debate?
-What should I self-study for?
