For the short answer questions, how picky are admissions officers about word limits? Can I go up to, let's say 300 words, for a limit of 200-250?

They are so picky that even if you adhere to the limit, they still might reject you!

The admissions officers are not going to count the number of words in your essay, and they will still read it even if it is longer than the limit by a noticeable amount.

With that said, most people can trim their essays to be around the limit, and going over by significant amounts is rarely warranted.

My usual guideline is that being within 10% of the limit is okay, but being over by more than that should encourage you to find an editor you trust and have them help you reduce your word count.
