So NYU and BU are the only schools I'm applying to that don't say the rec's have to be from teachers from core courses.
I'm wondering though, since they only want one recommendation, if they are more interested in a rec from an academic subject than from another course (that, for what it's worth, relates to my major)?

Anyone have experience with submitting "elective" rec's to these schools?

If they don't specifically say from an academic teacher, then pick the person who can best speak to your character and acheivements. A math team coach would be a great example. You don't want to pick someone you hardly know (ie your local congressman, TV personality, etc.) just for the hell of it or for the "prestige" factor. Picking someone who isn't a teacher of one of your core subjects but who knows you well in an academic setting would be a perfect choice.

Anyone who knows you well. NYU and BU are pretty liberal schools, so they won't mind some creativity. I'm guessing they realize that some applicants' teachers don't know as much as, say, their math team advisor.

So yeah, that condition was omitted especially for people like you =D.
