Lets say I apply as an applicant to the middle tier of UC’s such as UCSB, UCI, and UCD. Based on my scores and gpa, I have about a 50-50 shot to get into every one of them. Will the UC Office of Admissions make sure I get into at least one of them, or is each campus looking over each applicant separately and I could very well get screwed.

Each campus will evaluate you independently without regard to whether the others accepted or denied you admission. If you are UC eligible and are denied admission at all UCs you apply to (unlikely in your case, you appear to be well-qualified and are applying to campuses that match your qualifications) you will be offered admission to a UC that has space available (generally UCSC, UCR or UCM).
