<p>Ok, so everyone has told me that I should expect the worse, and then I will either get what I am expecting, or be pleasantly surprised.</p>
<p>In a previous thread, we already determined that if I get accepted that I am going to have 6 frozen hot chocolates, act like a tourist and eat Pinkberry. </p>
<p>But I dont know what to do if I get rejected. So far I have a few possible options.
1. Listen to Hawthorne Heights, and become emo.
2. Apply to CUNY.
3. Eat Chocolate
4. Eat cookie dough
5. Eat ice cream
6. Call my therapist and cry.
Any other ideas? Also, does anyone have ideas hoe to distract me from all of this until my letter comes (besides posting pathetic threats about eating caloric food)? </p>

<p>Alright rstlne. I will make you a deal. If buy some incredibly slim stroke of luck, NYU decides to take me, I will throw a Hanukkah party next year before exams. You are #1 on my invite list!</p>
<p>For me, personally, I told myself that I would get a job (like a for real job) regardless of whether or not I got into NYU. But as soon as I get that letter, my first move is to apply for a job… After either a couple hours of delirious joy or a couple of days of absolute devastation, that is.</p>

<p>VEGAN LATKES
Makes about 3 dozen</p>
<p>You can find recipes for traditional latkes, in which the grated potato is held together with eggs, almost anywhere, so I thought I’d offer my vegan version. In it, the grated potato is held together with something just as sticky as eggs (oatmeal!) and it works splendidly. I’ve also added a carrot for extra color.
2/3 cup quick-cooking oats (oatmeal)
6 large potatoes, peeled and finely grated
1 medium carrot, grated
1 medium onion, finely grated
l/2 cup matzo meal
Salt and freshly ground pepper to taste
Light vegetable oil for frying
Applesauce
In a heatproof bowl, combine the oats with 1 1/3 cup boiling water. Stir and set aside while preparing the other ingredients. </p>
<p>Combine the grated potato, carrot, and onion, and matzo meal in a mixing bowl. Stir in the oatmeal, then season with salt and pepper. </p>
<p>Heat just enough oil to coat the bottom of a large, nonstick skillet or griddle. Drop enough potato batter to form 2 1/2- to 3-inch pancakes. Fry on both sides over medium-high heat until golden brown and crisp. </p>
<p>Drain briefly on paper towels and place in a covered container to keep warm until serving. Serve warm with applesauce.</p>
