Relative Weight of Recs

Hello,

I was wondering about how valuable a recommendation is. I recently spoke with a professor who taught two of my courses and is well renowned in his field (which, coincidentally, is my major.) Since he promised to write me a stellar recommendation should I be inclined to more schools that are reaches for me? Do recommendations really matter that much?

Also, do you think that it's wise to have two professors from the department that I major in write me a rec or two professors from different departments speak on my behalf. This is assuming that all three professors equally know my academic potential. Will having utilizing professors from different academic fields show that I am a more well-rounded student?

Thank you.
