Ok so I sent a Rice alumni an email requesting an interview. The next day, he replied and said he'll be happy to meet me. I return his email, giving him my phone number and asking if he'll like to set up a time. That was four days ago.

I don't want to sound pushy by sending another email but seriously, what should I do?

I would wait longer. It is around Christmas and very little actually happens in the work world around Christmas. Also, there is no rush because adcoms are just gathering everything up at this point and maybe reading essays. I would check back with a followup email after New Years saying that "now that the holidays are over, I wonder if we can get together and talk about (insert name of school)."
