My current senior year schedule consists of the following:

AP Eng Lit
AP Stats
AP Gov't
AP Physics B
Art and Drama (required electives to graduate)

I have previously taken 7 APs and I'm an AP Scholar with Distinction

Is my schedule rigorous enough? This year I will be school president and I am working on a huge project that will consume a lot of time during the day. I just wanted to make sure this was rigorous enough.

You haven’t posted enough information to make a determination. I would check with your guidance counselor.

As part of your application to college, your guidance counselor will complete the Common Application Secondary School Report (SSR), which asks them to list the number of AP and honors courses available at your school, and rate the rigor of your course load as compared to other student’s at your school: (A) Most Demanding, (B) Very Demanding, (C) Demanding, (D) Average, (E) Below Average.

So long as your guidance counselor checks the ‘Most Demanding’ box, you will be fine.

Oh, I see. I thought it was based of off the admissions officers judgements. I will definitely have the “Most Demanding” box checked since the amount of APs I took are atypical to the normal amount (4-6) usually taken.
