If a school has rolling admissions, are my chances slimmer if I apply ED to another school, and wait till to see if im accecpted or not, then apply to the ed school?

For a rolling admissions college, those who apply earlier usually have some advantage over those who apply later. Be aware that there is no ED or EA program that prohibits you from applying to another college that has rolling admission at the same time or even before you apply ED or EA; thus, there is no reason to delay applying other than possibly the cost of the app.

what exactly is rollind admissions?

It is actually the method of admission used by the majority of colleges in the US. They make admissions decisions as applications are received (for example, those who apply in mid-October may learn their fate by early November and those who apply early November may know before Thanksgiving). Net result is that such colleges can sometimes fill or get close to filling some of their popular programs before the very late appliers even send in their application.
