Rushing CC in a year with AP Creds?

I originally posted this in the wrong forum...

So I'm considering CC with the hopes of going to UCB, UCLA, USC, or NYU (maybe apply to some really tough privates/ivys for the hell of it). I took 9 AP classes and passed them all, and I took 4 CC classes already. I'm going to go for a business/econ major and after calculating all the credits through IGETC I found out I already have around 40/60 credits done with only 5 mandatory classes to complete.

Which brings me to my main question, can I rush these classes over summer/first semester than just focus on ec's and not even take any classes second semester? Do colleges expect a rigorous curriculum like high school, where getting a 4.0 in the minimum will not get you into a good college? In other words, can I take like 2 classes a semester to finish up my credits and will colleges accept that or should I be going above and beyond, ignoring my previous credits, and just piling up on 6-8 classes a semester and end the year with like 80-90 credits... How does NYU hold up to all of this? (Since they don't have IGETC)

Any help/feedback would be greatly appreciated!
