Safety/Core Colleges for Sophomore with bad EC's

I am gonna be a junior in high school and I know this is kinda early, but I want to figure out what colleges to apply to. My stats are as follows -

ACT - 34/35 (getting on the practice tests....never actually took a real one)
PSAT - 227 (on my last practice test...80 Math, 69 Reading, 78 writing)
SAT - haven't practiced yet
GPA - 4.0 unweighted (yes I try) and 4.4 or so weighted
EC - scholastic bowl. (yeah i know this area is lacking, but I am doing Model UN next year. Doing a sport is kinda out of the question since its junior yr and I moved here 2 yrs ago, so I don't really know any American sports)

Do you think colleges will be more understanding towards my situation (about not having EC's?)

Anyway, my list of prospective colleges is as follows -

MIT, Stanford, Caltech, U of I (Urbana Champaign), Georgia Tech, UC Berkeley, Cornell, Columbia, Princeton.

As you can see, there are no safeties here. This is something I also need help on. Although my mother thinks that I should apply to all of the colleges listed above, I have to apply to safeties if, unfortunately, I get rejected to all or most of them. What colleges can I count as safeties?

What is your home state? Do you need financial aid? What do you want to study in college?

I came to USA 2 yrs ago from India.
No.
Engineering (either computer or electrical…leaning towards computer)
