Safety Schools?

I have to idea how to gauge how much a school matches me. Here is a little bit about me...

1920 on the SAT- 640 in reading, 670 in math, 610 in writing
4.2683 weighted GPA, 3.9024 unweighted
690 on the SAT biology (m) subject test, 660 on the SAT US History subject test
I've taken some AP Classes, including: AP Chemistry (10th grade), AP Calculus AB (10th), AP European Civilization (10th), AP Biology (11th), AP Calculus BC (11th), AP US History (11th), AP English Language&Composition (11th), AP Statistics (12th), AP Government & Politics (12th), and AP Literature (12th). I have passed all the AP tests.
This year I'm also taking Multivariable Calculus and Linear Algebra through a community college because they don't offer it at my high school.
I'm a 4-year varsity athlete in both cross country and track&field.
I've been an editor of our school newspaper my junior and senior year.
I'm the vice president of the National Honor Society.
I've interned at a congressional campaign office, UCSD hypertension lab, and hospice.
I'm also a member of the California Scholarship Federation and Interact Club (for community service). I was also the co-captain of my Academic League team freshman year.

I just retook the SAT, so I'm wating to get my scores back. Should I consider taking the ACT?

I know that I gave you guys a lot of information, but I wasn't sure of how much I needed to give to get an accurate response haha! Thank you so much!

Here are the schools I'm applying to:
UC San Diego, UC Los Angeles, UC Irvine, UC Santa Barbara, UC Berkeley, Cal Poly Slo, Boston College, Boston University, New York University, and University of Southern California.

Out of those, which are safety schools for me? Also, what are some other safety schools that would be a good match for me? I'm looking at either the west coast or the east coast. any size, co-ed school. I would prefer a school that has a "liberal" vibe.

None of those are really safety schools with your stats. In fact several would be reaches: Boston College, USC, NYU and Berkeley

What is your home state? What can your family afford? A safety school isn’t a safety unless your family can afford it and you would be happy to attend.

California

Safeties for you would be UCSC, UCR, UCM, CPP, SDSU (even Honors), Chico Honors, Sonoma Honors, LMU-LA, USan Diego; depending on your budget, so would UDenver, USeattle, UMN Twin Cities, Colorado-Boulder, UMaryland, Penn State, UMass Honors.
Chapman, UCSB, UCD, Cal Poly SLO (depending on major), Rose Hulman, Tulane, UMiami FL, UMiami Oxford, Northeastern, BU would be matches. (not sure why you’d want to attend BU when you have UCs in your State, much better academically, better weather…)
UCs have become unpredictable and UCB, UCLA and UCSD must now be considered as reaches for all CA applicants. Same thing for USC, NYU, and Boston College.
Luckil, you’d have a boost at UCSD making it a match due to your lab work there.
You’re very advanced at math, so you could try for Harvey Mudd even though it’s a big reach.

You only answered half of Erin’s Dad’s question. The amount your family will pay is extremely important.

some may not know that CSF means you’re a Calif resident, but nothing you’ve provided indicates how much your family will pay.

And…what is your major and career goal?
