SAT II Lit/US Hist/Spanish/Math

I was just wondering what the deal is with the amount of SAT II's I should take. Ive taken Bio and got a 630 and I took World and got a 750.

I want to submit at least 2, if not 3, scores with 750+.

I am strong in Lit, but don't know much about the test and it's difficulty.

Being a history buff, I think i would do well in US hist but my school cuts the course down into 2 years, the first year being the New World till about 1890, and then second year from 1890 to present day. I am a junior and am in the middle of the first part of the US curriculum so should I take it in June or wait until October/Nov?

Spanish is one of my best subjects but I have heard all of the language tests are pretty difficult. I am in senior spanish as a junior so should i take it in june or in the fall?

Also, I am weak in Math, but people keep telling me I need Math SAT II for the upper echelon of schools like the ivy's, gtown, hopkins etc., do I actually need it?

I took the March SAT and I am taking the May one also, probably the October one as well.
Sorry to ask so many questions but I am just pretty confused.
Thank you
