I'm going to apply for transfer admission to NYU - Stern. They said all prospects should take two SAT Subject Tests.

Considering my major is finance, which ones do you recommend?

Math is an obvious one...what should the other ones be?

Here's the quote from their website:

*We encourage all transfer applicants to submit official scores from two SAT Subject Tests (unless you are applying for any program in Tisch School of the Arts or the music or art programs in the Steinhardt School of Education) *

I'm very good at history and have a small passion for it. Do you recommend that?

The only SAT II that seems right for finance, is as you said math, so you have done the 'requirement'. Now go after what you like, you said history, so take that.

Math 2 = it looks better to the elite colleges and its easier to get a 800
Math 1 = its pretty basic math that isnt really that complicated but its hard to get a 800

no, you really shouldnt take both math 1 and 2. if you have taken precalculus, take math 2. from the collegeboard,

Mathematics Level 2 is a broad survey test intended for students who have taken college-preparatory mathematics for more than three years, including two years of algebra, one year of geometry, and elementary functions (precalculus) and/or trigonometry.

Mathematics Level 1 is a broad survey test intended for students who have taken three years of college-preparatory mathematics, including two years of algebra and one year of geometry.
