SAT II Well-Roundedness: Taking Both Humanities and Science/Math?

Hi guys,

I'm a Junior right now and a huge science/math person, though I'm getting grades in the A-range for US History and Honors English as well.

I've heard that it's best for you to take an SAT II in a Humanities subject as well as a Math/Science subject to make you seem more "well-rounded" to colleges? Is this true?
I plan to take Biology E/M and Physics this June upon completion of my AP Bio and AP Physics C Mechanics and E&M courses. Should I sign up for a subject test in the Humanities as well to do in November of my Senior year?

If so, I'm debating between US History and Lit. My US History teacher isn't very good, so I would have to do some preparation for the SAT II. However, I've always been very good at hardcore memorization of just about anything. On the other hand, I'm considering Lit because I'm thinking English seems like more of an "impressive" humanities course for a science/math person to excel in. I got a 730 on Crit Reading on SAT I, though (note, however, that this was after literally only TEN days of self-studying...), so I'm not sure if I'd do so well.

Is it reasonable to think of Lit as more impressive? I always thought that excelling in English, with all its nuances and analytic challenges, would seem better. It's also a mandatory course to take for at least one year in many colleges, while I will almost certainly avoid taking a History course again (being a science/math major).

What do you guys think is better to take? US History (easier) vs Lit (more impressive)?

Thanks in advance! Sorry for the long post.
