Which SAT II is considered the easiest to self-study for?

Maybe writing? It's a whole lot of common sense.

writing/literature : easy if you are a good guesser
world history is a bear to self-study

Depending on what you're good at. Maybe the language you're taking in school?

Math shouldn't be too hard provided that you are in math at school.

I'd say writing, that is if you know how to use grammar correctly... literature also if you're good with reading and analyzing things. math should be fine if you're good with math at school.. it all depends on you as a person, really.

Well, I am taking the new SAT, so writing is already taken care of. I am already planning on taking Math IIC, German (I am fluent), and US History, but I feel like I have to take more than just the minimum.

You don't need to take any more. They only need 3. Taking more won't necessarily give you any advantage.

Yale has never specified which 3 to take. Does that mean that we dont have to take writing ?

Right. You can take whatever three you want.
