How many SAT II's do you have to take. The website says 3, but does that include the writing portion on the New SAT?

You need 3 not including writing. Would it be okay to take math 1, math 2, and spanish as the 3?

math 1 and math 2 dont count as separate ones

^ Really?! Why not? They test differnt aspects of math don't they?

Well I suppose they all count as "Math"... To be safe I'd take another one.

My 2 cents

hahah yeah. do not take the IC and the IIC. that is antithetical to the goals of both versions and it will probably viewed as a cop-out.

any other opinions?

I dont think you should count them separately if your planning to take them at the same time. If you took Math IC say after sophomore year and scored well then that would be a different case... Just take a science SAT II like chem.
