okay, these (SAT subject tests) are a little bewildering...

mainly: there are 2 german sat IIs, ...does that mean i should take both? or which one should I take???

Are there certain SAT IIs that everyone really should take for applying to top schools (e.g. Math, Literature, etc...) or are they all more or less the same??

The foreign language tests come in two versions, with and without listening. You would just take one or the other. There are also two versions of the Math, level 1 and 2. The level 1 covers lower level math. Typically, engineering/science majors take level 2. The Biology test has an E (Ecological) and M (Molecular) option.

Some colleges, particularly large public universities, won't use the SAT II's even if you took them. Other colleges will require either 2 or 3 SAT II's. They may or not specify which ones they want. They used to sometimes require one of the Math tests and the Writing test. However, the SAT II Writing test is now obsolete because of the New SAT having the Writing incorporated into it. Some colleges that used to require 3 now may only require 2 because of this. Generally, you can take whichever ones that you want. Other colleges will only use the SAT II scores if they help you. At any rate, only your top 2 or 3 scores will be used.

The best time to take an SAT II test is right after you've completed the course in that subject.

The average score on an SAT II test is generally around 600, although some of them can be much higher, particularly the Math level 2. "Average" on a SAT II test is also very hard to get. The only people taking the test are people who are good in that subject and who are probably applying to selective colleges that require SAT II's. Being "average" in that group of people can be tough. It is very, very important to get study guides and practice tests for the SAT II tests. Not all high school courses are created equal and you want to take a practice test to guage things before you take the actual test.
