What's usually the lowest possible sat score an applicant can have to get into an ivy or Stanford?

You cannot make this distinction. Applicants are judged on many factors other than scores, so you can get a very low score and still make it in. A asian friend of mine got an 1870 on the sat and made it into brown and another Asian friend got into brown, harvard, and Cornell with a 29 on the act and low 600s on subject tests. You have to impress them with something other than scores.

There is no designated lowest. What you will see published are middle 50% ranges but those mean that 25% of those admitted had lower scores than what is shown. However, unless there is something special in your file such as that you are an underrepresented minority, you should usually assume you likely will need to be in at least the middle 50% range to have any chance. What that range is varies, e.g., for Yale it is about 2100 to 2350, for Stanford about 2050 to 2300. Also, being in the middle 50% range doesn’t mean you have a high chance of admission as greater than 85% of those who are get rejected.
