Considering you can only take 3 in a day, I don’t know when you will fit 5 in without passing the deadline if you’re a senior

Here’s what the JHU Admissions site has to say about SAT IIs: Freshman applicants are strongly encouraged to submit two SAT subject tests. Applicants interested in an engineering major are strongly encouraged to submit scores from the Mathematics Level 2 SAT subject test and at least one science SAT subject test.
If you do take 5, you certainly don’t need to submit all of them as JHU only encourages you to submit 2. So whether you want to take 5 is up to you, but only submit your best 2! Hopkins doesn’t require SAT IIs, but does encourage them so that you can show off your abilities, typically in areas that you plan to pursue. I don’t think it’s necessary to take all 5; I would recommend taking the ones that relate to what you plan to study in college and that you know you can do well on! Good luck!

the site said that they expect prospective BMEs to submit a math and science SAT II but I only submitted 800 Bio and 770 US History (I also had a 5 on Calc AB).
I think 5 subject tests is overkill, and frankly you’re trying too hard. Take a chill pill. Don’t be a grind. I suggest you to take one math and one science and do really well on those two if you’re applying as a STEM major (shoot for 750+). If you’re applying as as humanities, take whichever 2 subjects you’re the strongest in. And again, if you don’t do well on these tests its not going to kill your application.
I agree with everyone else. Why submit 5 scores when you can focus on 2 or 3 tests? You will be able to get more tries in on just a few subjects, so you can focus on each one more and get a better score.
