I am planning to take 5 SAT subject tests: math II, physics, biology, chem and french. But is it necessary to take all five? Would it increase my chance of admission if I do? (if I do really well)
No. Focus on and take three, even though Penn will only want to see your top two scores (which is to your benefit). You’re only diluting your studying ability IMHO. Why waste time? Crank on three, leave the other two.

Take the three that you can score highest. Doesn’t matter what your post college plans are.
