Okay, so I need some really good LACs or just schools with really good Education departments.

I'd like to stay in California or even just West Coast
I don't really mind size, but I'd like it to have at least 4 or 5,000 students.

Well, you could try Concordia Irvine. The Concordia schools have really nice placement programs for teachers. But keep in mind that they're quite religious, and not right for everyone.

Aside from that, I can't think of any particulars that come to mind.

I would probably save money and go to a public, since paying off privates as a teacher might be a bit frustrating. If you want something slightly smaller than the UCs, look at the more LAC-like publics, such as Sonoma State.

Thanks! :)

I actually happen to be religious, but I hadn't looked at Concordia at all.

Loyola Marymount has a whole school of education.
