Scores Seen By Admissions Officers

I was wondering, if I happen to take the SAT, a certain SAT 2, or a certain AP test for more than one time, will universities only see and take my best score, see all my scores and then take my best score, average all of them, or average the worst & best, etc.?

{I haven't taken the SAT yet. I'll be a sophomore next year}

Or if all the ways the SAT is seen in each of the universities are different, can you guys tell me specificially for:

UC Berkeley
UC LA
UC Irvine
Stanford
Harvard
Yale
Princeton

I think they see them all and pick the best scores. That's what everyone is saying.

don't you just that term "admissions officers"? it sound like they're police who will cuff you and throw you in a dark 1X1 meter cell if they don't like your application.

The UCs (and maybe Yale?) take your best score from a single sitting.
