I've taken a lot of the practice tests from the blue book and i get frustrated sometimes because the resulting score ranges are so broad

i.e.: i got a 660-790 for the writing section. i don't know whether to be optimistic or pessimistic about this because a 660 is VERY different from a 790

so if you took the BB practice tests, and then the real thing, how did the scores compare? were they on the higher or lower side? or just the average of the two?

I would actually say go by the lowest score, just to not get your hopes up on test day. Or just strive to get your lowest score higher and higher. My lowest score on the blue book test was closer to the scores I have gotten on the real one.

It's really hard to say. I think the CB BB tests vary wildly in difficulty.

On the high end I was getting 2300+ every test. On the low end I was getting 2100+. However, I did not get very good raw scores (TERRIBLE really)

On the real thing I missed one math, one CR, and 3 W (huge improvement in Raw Score). I got a 2250.

also..could someone explain to me the sending scores process? i understand that you can list 4 colleges when you take the SAT. but what if you don't wanna send your first ever SAT scores to your dream school before you actually see the results? what are my options?

I would say they are all harder as a whole, but some sections are too easy, and some too hard. I don't really remember though since I finished the whole book in February lol
