Yes, anyone can help you fund your studies and be listed as a sponsor on the financial documents for your visa application (“certification of finances”), including your uncle.
That being said, you will also have to convince your visa interviewer that you intend to leave the US upon finishing your studies. Drawing attention to the fact that you already have family in the US could make that more difficult. (Whether that’s actually a concern seems to depend a lot on where you are from and which university you’ll be studying at. You are less likely to run into problems as a German studying at Stanford than as an Indian studying at a random cheap local university.)
