Semi-Internship at UN

So last year, a guest speaker from the UN came to our school and I was lucky to get her business card. Over this past summer, I contacted her for volunteering opportunities but because formal internships were only available to master's degree students, she asked me if I would be willing to work on simple assignments that her secretary could send me via e-mail. I worked on very few simple things like finding articles and summarizing stories, which I put on my resume. She said she would be willing to write a letter telling about the work I assisted in so I was wondering if I should send that letter to the colleges I'm applying to just to demonstrate my honesty and commitment......

I'd assume that because this is not a recommendation but rather a letter stating that I actually did do some work for UN, it would not clog the application process...

What would you do if you were in my situation?

Well I wouldnt try to pass this off as an “internship” because well … its not. But id still list it and have her send in the letter.
