I only sent in one of my ACT scores and I'm applying for college of engineering. Also, 800 on SAT Math II and Chemistry (if that helps).
Composite: 34
English: 36
Math: 33
Reading:34
Science:32
Writing: 09

Should I send in my other two? especially because my scores vary a lot
Other two ACT scores:
Composite: 34
English: 35
Math: 34
Reading:33
Science:35
Writing: No writing

Composite: 33
English: 35
Math: 34
Reading:35
Science:27 (don't know what happened here)
Writing: 10

I’m guessing the first two are the best. For engineering they probably want higher scores in Math and science, which your second score has. However, they both are composite and the first one has writing which is required for applying. Also, they vary very slightly. Perhaps supplement with SAT II’s?

Cornell doesn’t participate in score choice. Unless you took those ACT tests prior to 9th grade, you are required to send all of them.

I have already emailed the Cornell Undergraduate office and they only require all SAT scores be sent in. You are allowed to only send in one ACT but I’m not sure if it will matter that much if I send in my other 2

Interesting. That isn’t what their blog post says from the admissions department. We were so concerned when my son applied a few years ago that we unarchived ACT tests from prior to 9th grade. The admissions counselor later told us that had been beyond what was needed. I probably would have sent the others to let them superscore. Good luck!
