Do adcoms consider an applicant’s senior year courseload in evaluating the rigor of his/her coursework?
Also, does the number of AP classes taken in senior year matter at all?

Yes, they factor that in as well.

Edit: But it won’t make a huge difference. GPA and standardized testing scores are given the most weight, followed by personal statement and then course load.
