I am a deferred ED person and I sent in a letter that I think might help my case. I also send in a "What else would you like us to know?" form before the ED deadline. I'm probably just being paranoid, but I kind of want to make sure that they GOT these optional things. Should I call and ask or will that just annoy them? And can they even tell you if they have specific things (last time I called, the lady said they had too many documents coming in to check on individual applicants).

I wouldn't call yet. ED applicants probably have a while longer before their files are actually reviewed because the adcom has already reviewed them, and I would assume they would wait for a while before starting with that group again. Also, there are probably still tons of pieces of mail flooding into that office, given that SAT sends score reports late, teachers are sending in optional recs still, and people are beginning to send in financial aid applications and mid-year reports. With the number of people calling the admissions office about interviews, also, I would probably refrain for a little while.

I would try calling mid-February. That seems to be late enough that everything will be processed (or, mostly processed), but not too late that you couldn't fax/mail an extra copy if it turns out they didn't get it.
