Do AP scores matter in the admissions process? Will it look bad if I don’t send them/self-report them?
No need to submit AP scores until you decide which school you will be attending. The school will then tell you if you can get credit and if you’re exempted from any courses. It’s an extra charge to send them and unneeded until you are trying to get credit for having taken them.

How would they even know that you took the SAT or Subject Tests?
AP scores don’t matter much, but can help a little to confirm other things if they are good.
As mentioned, there is no need to have AP scores sent until you’re definitely going to the school. You definitely should self-report them if they are 4 or 5. You probably should self-report them if a 3. There’s probably no point to self-reporting a 2. (If you don’t report it, they’ll just guess you either didn’t take the test or got a 2 or 3.)
Most schools do want a score sent from the College Board for SAT and Subject Tests and won’t consider any self-reporting unless they specifically say they will. If the school doesn’t say they want to see all scores, and they don’t say Subject Tests are required, you can decide if you want to send along the Subject scores.
